6 Medium eggs
60 g Caster sugar
2 tsp Vanilla extract
2 tsp Liquid honey
160 g Plain white flour
2 pinch Salt
2 tsp Baking powder
20 g Water
300 g Azuki paste

Place the eggs, sugar, vanilla and honey in the mixer bowl. ` Close the lid. Blend on medium speed for 1 minute.

Add flour, salt, baking powder and water. Close the lid. Mix again on medium speed for 1 minute. The dough should be smooth and glossy. Using a spatula, scrape the inside of the bowl and mix again on medium speed for 30 seconds until the dough is smooth. Leave to rest in the bowl for 20 minutes.

Pour a small ladleful of batter into an oiled frying pan over low heat. When the bubbles have risen to the surface, turn the pancake over and continue cooking. Make a second pancake in the same way. When cooked and still warm, place 1 tablespoon of azuki paste in the centre of the first pancake, then place the second pancake on top, as if making a sandwich. Seal the dorayaki by gently pressing the edges together. Continue until all ingredients have been used.
